Ingredients:
- 10-15 dried chili peppers
- 1 medium onion, chopped

- 1/4 cup vegetable oil
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- 1 tsp ground cumin

Instructions:
1. Soak the dried chili peppers in hot water for about 15 minutes until they soften.
2. Drain the water and blend the peppers in a food processor or blender until they form a smooth paste.
3. In a separate pan, heat up the vegetable oil over medium-high heat.
4. Add the chopped onions, minced garlic, and minced ginger and sauté until fragrant and lightly browned.
5. Add the ground dried shrimp or fish to the pan and stir for a few minutes until fragrant.
6. Add the chili pepper paste to the pan and stir well to combine with the other ingredients.
7. Add the tomato paste, smoked paprika, cumin, and salt to taste, and stir to combine everything.
8. Reduce the heat and let the shito simmer for about 10-15 minutes, stirring occasionally to prevent burning.
9. Once the shito has thickened and darkened in color, remove it from the heat and let it cool.
