Ingredients:
- 2 cups of palm nuts (available canned or fresh)
- 1 onion, chopped

- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon ground pepper
- 2-3 cups of water or chicken/vegetable broth
- Salt to taste
- 2-3 tablespoons of palm oil or vegetable oil
- Fresh parsley or cilantro for garnish
Instructions:
1. In a blender or food processor, blend the palm nuts with enough water to create a thick, smooth paste. Set aside.
2. Heat the oil in a large pot over medium heat. Add the onions and garlic and cook until the onions are soft and translucent.
3. Add the chopped tomatoes, ginger, basil, thyme, and ground pepper. Stir to combine and cook for a few minutes until the tomatoes have softened.
4. Add the palm nut paste and broth/water to the pot. Stir to combine and bring to a simmer.
5. Reduce the heat to low and let the soup simmer for about 30-45 minutes, stirring occasionally. If the soup is getting too thick, add more water or broth as needed.
6. Taste the soup and season with salt as needed.
7. Serve hot with fufu or rice balls, garnished with fresh parsley or cilantro.
