A recipe for preparing fried rice:
Ingredients:
- 3 cups cooked rice (preferably leftover rice)
- 2 tablespoons vegetable oil
- 2 eggs, lightly beaten
- 1 cup mixed diced vegetables (carrots, bell peppers, onions, peas, corn, etc.)
- 2 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 2 green onions, thinly sliced
- 2 tablespoons soy sauce
- Salt and pepper, to taste
Instructions
1. Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Once the oil is hot, pour in the beaten eggs and cook until scrambled. Remove the eggs from the skillet and set aside
2. In the same skillet, add another tablespoon of vegetable oil and stir in the mixed vegetables, garlic, and ginger. Cook for about 5-7 minutes, or until the vegetables are tender.
3. Stir in the cooked rice and soy sauce, and continue to cook for another 3-5 minutes, stirring occasionally.
4. Add the scrambled eggs back to the skillet, along with the sliced green onions. Stir to combine and cook for an additional 1-2 minutes.
5. Taste the rice and season with salt and pepper as needed.
6. Serve hot as a main dish or side dish.
Note: You can add protein such as chicken, shrimp, or tofu to the fried rice if desired. Simply cook the protein separately and add it back to the skillet when you add the eggs.
