"Palava sauce: A Nutritious and Flavorful Ghanaian Dish"

 Palava sauce popularly known as Nkontomire stew, also known as cocoyam or taro leaf stew, is a nutritious and flavorful dish that is popular in Ghana. Here is a recipe to prepare Ghanaian nkontomire stew:


Ingredients:

- 2-3 bunches of nkontomire (cocoyam or taro) leaves, washed and chopped

- 1 pound of meat (beef, chicken, or goat), chopped

- 1 onion, chopped

- 2-3 cloves garlic, minced

- 2-3 fresh tomatoes, chopped

- 1 tablespoon tomato paste

- 1 teaspoon ginger, grated

- 1 teaspoon dried basil

- 1 teaspoon dried thyme

- 2-3 cups of water or chicken/vegetable broth

- Salt and pepper to taste

- 2-3 tablespoons of palm oil or vegetable oil

- Fresh parsley or cilantro for garnish


Instructions:

1. In a large pot, heat the oil over medium heat. Add the onions and garlic and cook until the onions are soft and translucent.

2. Add the meat and cook until browned on all sides.

3. Add the chopped tomatoes, tomato paste, ginger, basil, and thyme. Stir to combine and cook for a few minutes until the tomatoes have softened.

4. Add the water or broth to the pot and bring to a simmer. Reduce the heat to low and let the stew simmer for about 20-30 minutes, stirring occasionally.

5. Add the chopped nkontomire leaves to the pot and continue to simmer for an additional 10-15 minutes until the leaves are cooked and tender.

6. Season the stew with salt and pepper to taste.

7. Serve hot, garnished with fresh parsley or cilantro.
