 Okra soup is a popular and delicious soup in Ghana, made with fresh or dried okra, meat or fish, and a variety of vegetables. Here is a recipe to prepare Ghanaian okra soup:



Ingredients:

- 1 pound of meat or fish (beef, chicken, or fish)

- 1 onion, chopped

- 2-3 cloves garlic, minced

- 2-3 fresh tomatoes, chopped

- 1 tablespoon tomato paste

- 1 teaspoon ginger, grated

- 1 teaspoon dried basil

- 1 teaspoon dried thyme

- 1-2 cups fresh or dried okra, sliced

- 2-3 cups of water or chicken/vegetable broth

- Salt and pepper to taste

- 2-3 tablespoons of palm oil or vegetable oil

- Fresh parsley or cilantro for garnish


Instructions:

1. In a large pot, heat the oil over medium heat. Add the onions and garlic and cook until the onions are soft and translucent.

2. Add the meat or fish and cook until browned on all sides.

3. Add the chopped tomatoes, tomato paste, ginger, basil, and thyme. Stir to combine and cook for a few minutes until the tomatoes have softened.
